What a beautiful day ... the sun was shining ... there was a cool breeze ... we woke up leisurely and chatted the morning away ...
... this certain someone decided to soak in some rays!
We got ready and went to Mass ... I was brought up Catholic, but have always felt very close to the Jewish Religion, but that I conversation will have to wait for another post ...
... I love the tradition of the Catholic Church, oddly enough it is the same thing that many do not agree with, and the reason why many have left the Catholic Church for others ... but I love the reverence, the hymns, and dare I say the consistency of it all ... but as I looked at a full yet not overflowing Church I felt a sadness overcome me ... the Church down the street, the modern one, the one where funky songs are sung and the one that the preacher is seen as more in touch with the youth today was at full capacity, actually it was overflowing.
This was St. Peter's Cathedral today ...
A lady stopped me after Mass had ended and stated how beautiful my family was, how she could tell I had done well with the girls ... I got emotional, such a beautiful compliment from a total stranger. For that I am grateful.
The girls ...
I had originally planned to make Easter lunch ... but Nana was starving after Mass ... (we went to the 1:30 PM service) ... so we decided to have Easter dinner later and lunch at one of our favorite places ... Einstein's Bagels ...
No surprise here ... toasted poppy seed ... cream cheese and lox ...
We enjoyed the day a little more and then finally headed home ... as soon as we arrived I headed to the kitchen.
Easter Menu ... changes will be noted below:
I decided to skip the bruschetta as I added a Ceviche to the menu ... Roast Beef - check, sweet potato wedges - check, Cilantro Lime Dressing - Check and Delicious, Salad - Check, Cetrioli con Aceto (cucumbers with vinegar) - check, Averie's Fudgy Nutella Brownies - Check, Frosting - did not do it - Cupcakes for the Dilworth Soup Kitchen - done, but will be frosted tomorrow.
I was going to do popovers, but I decided to simplify. I was going to do Averie's cream cheese frosting, however after making dinner and 24 cupcakes, and oh an unplanned Lemon dessert ... I just thought it was better just to leave the decadent brownies without the frosting.
1. Shrimp Ceviche
2. Roasted Sweet Potatoes
3. Roast Beef
4. Bread
5. Cucumber Salad
6. Cilantro Lime Salad
7. Lemon-Lime Dessert
8. Averie's Fudgy Nutella Brownies (uncooked)
9. Averie's Fudgy Nutella Brownies (cooked)
Thank you Averie for the wonderful recipe ... everyone loved the gooey, Nutella filled brownies ... (I may have exaggerated with the Nutella) ... who can resist!
What a wonderful weekend ... but it does not stop here ... tomorrow I am off! Yes, no work for me tomorrow ... we will be visiting the Dilworth Soup Kitchen to feed our souls and then relax to bring on the new short week!
Have a wonderful Sunday ... a dopo ... J
