... new recipe ... my new recipe of the month ...

I know it is strange to be speaking of resolutions being that we are in April ... but I have to admit I keep thinking about how to accomplish my resolutions throughout the year ...

One of the fun and easy resolutions is to make a new recipe every month ... I cannot remember my new recipe for March ... of course this is bothering me ... therefore ... I want to share the pics of my new recipe for April right away so that I do not have to worry about obsessing about remembering two recipes only one.

April New Recipe ... Green Mango Salad ... easy to prepare and delicious.

Last month I went to a Thai/Japanese Restaurant with my colleagues (and friends) and tried Green Mango Salad ... apparently everyone had already eaten this dish before, but for me it was one of the night's highlights.

So here is my attempt to replicate this refreshing salad ...

I cannot believe it is Friday ... this has been the longest week ever, even though it was a short week for me ... 

I have been feeling under the weather so I have not been running ... which somewhat makes me feel uneasy since I am planning to go back to running the mountain on Saturday ... this time around I hope to run at least 5 miles (almost all uphill!) ...

I found a wonderful new recipe that I hope to try soon ...  Coconut Tres Leches Cupcakes ... inspired from How Sweet It Is .. I say inspired because I have my own Tres Leches recipe ... but I really think it is brilliant to present it in cupcake form, this recipe will also allow me to use my beloved piping bag!

  1. I've never had mango salsa before either and I live in one of the mango capitals of the world! Mango chutney for sure, no salsa though :) Looks fab!
