Today was a beautiful lazy Sunday ... I opted not to run and make today a rest day as it has been raining on and off ...
It is grey and cold outside ... and today it was very fun to wake up to the Prom recount and once again look at pictures ...
Lunch was a very simple fusilli con olio al tartufo ... Sundays call for simple lunches ... however, I did decide to venture in a culinary experience ... a wonderful focaccia ...
It is sometimes difficult to recreate a dish outside of the country it was born in ... case in point ... the homemade pizza ... I have to admit ... I was never very successful at making homemade pizza ... not even in Italy ... so even though I had Vittorio's Focaccia recipe slated to try since I discovered his site via Manu's Menu.
Today was the perfect day to give it a go ... I love focaccia ... I can't even tell you how much focaccia I enjoyed with my friend Paola while visiting her in Liguria during wonderful summer vacations. We would pack to spend a whole day at the beach ... before arriving we would stop and buy focaccia every day and that is was sustained our 12 hour days at the beach ... heavenly!
So today I set out to make a perfect focaccia ... and bring some wonderful memories from Italy back into our home ... I did however make one mistake ... I made just one batch ... so take my word ... one batch is just NOT enough!
I took two quick pics because we were just so ready to taste ...
I have to admit I am absolutely amazed at the result ... it was delicious ... I did half with onions and half plain, but it was NOT enough ... as it is already GONE! Lesson learned ... next time ... I will make a three batch minimum!

The recipe is amazing ... I was afraid to admit it ... but I could tell from the start that that it was going perfectly ... the recipe is simple ... BUT you need to have the time to let the dough rise as indicated in the recipe ... you need to have the time and the patience to wait ... the result is totally worth it!




Spent some time browsing your blog and love it! Prom always makes Moms teary.....Whether it is the first or the last or the ones in between. She is beautiful and so is your focaccia bread. I always add sliced olives :)
